Locavore is one of these restaurants, blessing us with dishes like sizzling sinigang and lugaw topped with foie gras. For their newest branch at S Maison at the Conrad, they're playing around with another Filipino staple, seafood, with new dishes exclusively available to the branch.

The Pinipig-Cereal Sugpo
You may be familiar with Cereal Prawns, but Chef Mikel "Kel" Zaguirre adds a Filipino touch to the Singaporean staple by turning it into The Pinipig-Cereal Sugpo (P980). Chef Kel coats jumbo black tiger prawns in crushed pinipig and cereal then tosses them in salted egg floss, wansoy, and smashed saba, with radish pancit to balance the sweet-salty and slightly peppery flavors.

The Soft-shell Crab Negra with Alavar Sauce (P980) is no slouch in the flavor department either, with soft-shell crab tempura coated in a punchy blend of alavar sauce, chimichurri sauce, labuyo aioli, edamame, and smashed saba with fried squid ink batter and radish pancit for crunch. If you're in the mood for something light and fresh, have the Halabos na Suahe with Kelly Sauce (P1,150), the fresh suahe or giant shrimp cooked just right to keep its natural tenderness and oceanic sweetness. Servings are hefty and flavors are novel yet also comforting—combined with a spacious dining area, Locavore S Maison may be a great fit for that next family reunion.
